This is obviously false, try hosting your own email server in 2026 for example. These “own your own data” movements need so many hooks into computers they don’t control you might as well just use the cloud. If you’re doing sensitive stuff, I’d do a risk profile. Who is trying to hunt me. USA? Use Russian or Chinese tech. Worried about China? Use something from Korea.
