Pahadi Cucumber Yogurt Raita Recipe
Ingredients:
1 cup thick yogurt (curd)
1 medium cucumber (grated)
1 small green chili (finely chopped) (optional)
½ teaspoon roasted cumin powder
¼ teaspoon black salt (or regular salt as per taste)
½ teaspoon black pepper powder
1 tablespoon fresh coriander leaves (chopped)
1 tablespoon fresh mint leaves (chopped)
½ teaspoon mustard seeds (optional for extra flavour)
Instructions:
1. Prepare the yogurt:
Whisk the yogurt in a bowl until smooth and creamy.
2. Grate the cucumber:
Peel and grate the cucumber. Squeeze out excess water to prevent the raita from becoming watery.
3. Mix ingredients:
Add the grated cucumber green chili roasted cumin powder black salt black pepper, and chopped coriander and mint leaves to the yogurt. Mix well.
4. Temper (optional):
If using mustard seeds heat a teaspoon of oil in a small pan add mustard seeds, and let them splutter. Then pour this over the raita.
5. Chill & serve:
Let it rest in the fridge for 10-15 minutes. Serve chilled as a side dish with parathas pulao or any desi meal.
