@DannyDoubleYew Hey Danny, thanks for sharing your process. Even on higher fat mixes we don't get a lot of rendering because grass fat vaporizes rather than pools (because of the lack of saturated fat) But lemme know if we need to replace ground. It's always possible it got worked as 90+!

Then I needed to cook off a few pounds of ground from an unnamed ranch (Bastrop Cattle Company). Burgers and Salisbury Steak. They say it’s 85/15, but the burgers were a little dry despite being between medium and medium well. A bit disappointing but not bad. The Salisbury steak was the only thing I would call a win. It came out really nicely, but even in the cast iron there just was not much fat rendering. I’d be interested to see what the fat content REALLY is. I wouldn’t be surprised if it’s 93/7. Oh well. Can’t win them all!
