In celebration of Derby season, kick things off with Sara Havens’ Chocolate Mint Julep. 🏇 A refreshing twist on a classic that blends rich chocolate, cool mint, and bold Kentucky bourbon that’s perfect for race day and beyond. Ingredients: 2 ounces of Kentucky bourbon (100+ proof; I like to use Old Forester 100 Proof) ½ ounce simple syrup ½ ounce Ballotin Chocolate Mint Liqueur Crushed Ice 5 Mint Sprigs  Instructions: Mix bourbon, simple syrup, Ballotin Chocolate Mint Liqueur and 2 mint sprigs in a cocktail tin. Stir until fully mixed. Fill glass (or proper julep cup) with crushed ice. Pour mix over the ice. Garnish with mint and grab that straw. Dust with powdered sugar (optional). At last month’s Bourbonomics meeting, industry leaders came together to discuss where bourbon is headed next and how brands are adapting to a shifting landscape. CaskX Director of Whiskey Sara Havens attended the session and brought back key takeaways from the conversation. "The panel at this year’s Louisville Business First Bourbonomics event offered a great range of voices in the industry. Yes, production is down this year, but as Master Distiller Chris Morris said, “Nobody said the bourbon business was easy.” The consensus agreed that strong brands will prevail and strategies are now in place to carry on through the ebb and flow. There are pockets of growth, said Angel’s Envy General Manager Gigi DaDan, noting that her company has reached out to other whiskey distilleries across the globe on ways they can work in unison. “The closer we come together, the better we will be as an industry,” she added. Whiskey 101: What Is the Angel’s Share? 🥃 “Angel’s Share” is the natural process by which the liquid inside the barrel evaporates over time. Inside the rickhouse, temperature shifts drive the spirit to expand into the wood and contract back out, gradually releasing a small portion into the air each year. While this results in a loss of volume over time, it also concentrates the remaining liquid, thus enhancing depth, character, and overall quality.
