@miastarvz maybe you can just run it through a food processor if you have one to make it finer, i've done this with white sugar for macarons to get it super fine, never tried with brown sugar but i would think the result is similar

Hey! I’m looking to bake some strawberry pastries and the recipe calls for sugar however my family doesn’t purchase white sugar. I was going to use brown sugar but whenever I do it leaves my pastries grainy. Does anyone know how to combat this issue or if there is any other sub?
