Your doctor told you your cholesterol was high. They probably didn't tell you there are two types of LDL. And only one of them is dangerous. LDL cholesterol comes in two particle sizes: Large, fluffy LDL (largely benign) which does not significantly contribute to arterial plaque. Small, dense LDL (the dangerous type) that penetrates arterial walls and drives cardiovascular disease. A standard cholesterol panel does not distinguish between them. It just says: LDL high. Here is a statin. What drives small dense LDL? Not dietary fat, refined carbohydrates, sugar, seed oils but CHRONIC inflammation. What raises large fluffy LDL (the benign type)? Saturated fat. Eggs. Red meat. The very foods we've been told to fear for 40 years raise the harmless particle. The foods we were told were heart-healthy drive the dangerous one. Our grandparents ate palm oil, eggs, and organ meats their entire lives. Cardiovascular disease was not their leading cause of death. We replaced their diet with vegetable oil and cornflakes.
