One of the quirkier uses of AI that I've found really fascinating is explaining legal history. You can give AI an ancient legal document and ask it to make sense of it-- and if you prompt it well, it seems to be able to do that quite well. An example below.

@legalstyleblog @IJSanders I confess error! For my first cut at citations, I relied on library-supplied metadata via Zotero. I’ve corrected some of the resulting mistakes, but clearly not all. (And I will be immensely grateful to whatever student editors eventually cite-check this!)

People who use @SSRN : Am I right that they changed their submission process recently so you now can't post an unapproved draft version, but rather have to wait the 3-7 days for them to approve your submission before any draft can be viewed?
