Pork Chops with mild cherry peppers. So tasty and literally mouthwatering. What would you pair with this dish? Keep in mind the food should not be more acidic than the wine…. 🤔Your thoughts! 💭

2018 Opus One Napa.
Anyone that knows me well, understands my thoughts on Opus One. When at the top of its game; it is one of the finest wines California has to offer. Aromas of blackberry, cassis, black cherry, violets, white pepper, rose petals Satin tannins that delivers a very seductive and beautiful red wine as any world class wine anywhere in the world.
But in my experiences, Opus One is "hit & miss". And when the bottle cost $350-$400 a bottle, to me it just isn't worth the risk. And I've had too many "OK" Opus One.
Well this one missed. All the previous notes were there: Blackberry, cassis, black cherry, violets, & rose petals. But the wine was dull. Tannins we're almost nonexistent, as was the acidity. And at that price these wine should be balanced and damned near perfect. It's all about balance in a fine wine; no one aspect of the wine (acidity, alcohol, sweetness , body, tannins) should be out of line. @OpusOneWinery

Blind tasting exam wines for @PolyUSHTM students in the master’s degree program for International Wine Management – same producer, same vintage, very different quality levels. Some found it easy, some found it challenging. Are these two wines an easy pair of wines to taste blind?

Chicken Parmigiana is a classic
Italian -American dish! Parmigiana is a style of cooking, and not to be confused with Parmigiano Reggiano. The latter is an 🇮🇹cheese used in the Parmigiana dish. Confused? 😆Do you see what I see?
