@mcharcuterie @shroomgirl Peel and Blanche for 20-30 sec then shock in ice water. Arrange cold asparagus in 1 qt Mason jar, pour over it boiling hot pickling liquid then process in RWB. I use this ratio: 2 Tbsp kosher salt 3 Tbsp sugar 3 cup water 1 cup white wine or champagne vinegar
