And how it might the idea of terroir more broadly apply to our wider food systems, particularly in an era of climate crisis, declining soil health and food insecurity?

A bit more on the theme: From the French word meaning earth or soil, terroir is a term used in gastronomy to define and how the environmental factors in a wine’s provenance affects its taste. But isn’t every single thing that we eat affected by its own terroir?
