You won't believe this, but sushi was invented by poor people. Sushi began in Southeast Asia, over a thousand years ago. Fish was buried in rice and left to ferment for months. The rice was thrown away. Only the fish was eaten. It was survival food. Around the 8th century, it reached Japan. In the Edo period, vinegar replaced fermentation. Now the rice could be eaten too. Sushi became fast. 1824. A man named Hanaya Yohei set up a cart in Tokyo. One piece was the size of a tennis ball. It cost about as much as a bowl of noodles. His customers were carpenters, messengers, fish market workers. They ate standing, with their hands, in under a minute. Sushi was the McDonald's of old Tokyo. 1923. The Great Kanto Earthquake. Sushi chefs fled the ruins of Tokyo. The dish spread across Japan for the first time. 1958. Conveyor belt sushi was born in Osaka. One plate cost 20 yen. It became a salaryman's lunch. 1970s. Sushi started going upscale. In Japan's bubble economy of the 1980s, it became a business dinner. Sushi became "a symbol of success." By the 2010s, omakase in New York cost over $500. By the 2020s, top Tokyo counters had year-long waitlists. Sushi used to be the food of working people. Now, we work to eat sushi.
