Sushi chefs fled the ruins of Tokyo. The dish spread across Japan for the first time. 1958. Conveyor belt sushi was born in Osaka. One plate cost 20 yen. It became a salaryman's lunch. 1970s. Sushi started going upscale. In Japan's bubble economy of the 1980s, it became a business dinner. Sushi became "a symbol of success." By the 2010s, omakase in New York cost over $500. By the 2020s, top Tokyo counters had year-long waitlists. Sushi used to be the food of working people. Now, we work to eat sushi.
