The world is so disrespectful of Filipino food. How are you going to elevate a cuisine that has risen through the ashes of colonization and revolution? Our food honors our ancestors and our history and that's all the elevation it needs.

Filipino spaghetti is a testament to Pinoy ingenuity. Our ancestors took a dish introduced by colonizers and made it ours. A key ingredient, banana ketchup, was created by a war hero who saved thousands of lives. You don't have to like it, but Filipino spaghetti deserves respect.
