Last night had the good fortune to go to Simon Kim’s Cote’s newest locations in NYC, Cote 550, and Chimera Bar. Simon leased 15,000 sq ft and three levels off Madison, the top floor will be an Omakase Sushi restaurant named Sushi Yoshitake, and helmed by Japanese chef Masahiro Yoshitake, of Sushi Yoshitake, in Tokyo, which has two Michelin stars, and the three-starred Sushi Shikon in Hong Kong. Simon chooses his partners wisely.
We started our night at Cote 550, in the lower level, which is a higher end, slicker, version of Cote Flatiron. With a similar menu, with a few very notable upgrades and additions. Was impressed with their Wine list, which had the 2014 Ray’s available by the glass even! We had the 2016 Cos d’Estournel which paired perfectly with the gilled beef, and we were told “this is the first bottle of wine ordered at Cote 550,” a fact I will hold onto with pride. Food was on par with Cote Flatiron, which is to say, amazing quality, and executed flawlessly. One menu addition we did add, and throughly enjoyed, was the A5 Black Jack Wagyu on milk toast with fresh perigord black truffles cut into 4 bite size pieces.
After our amazing dinner we headed up to Chimera bar on the main level. Fantastic high ceilings, and beautiful decor. Chimera has one of the best Martini Menus, and wine by the glass selections I’ve seen, perhaps on par with the Connaught in London. Examples of wines by the glass are 2016 Domaine Dujac Gevrey Chambertin 1er Cru 'Aux Combottes,’ 2002 Solaia, and the 2009 Mouton, just to call out a few. Chimera has a fantastic food menu, with such offerings as Wagyu Corndogs, Petrosian Caviar Chicken Nuggets, and a 550 Burger with Tallow Fries.
This bar would rank among the best cocktail bars I’ve been to, more on a level with the aforementioned Connaught, or the likes of Atlas in Singapore.

And now for some good news… young men are committing far fewer violent crimes than past generations. NY just had lowest amount of murders in 3 months in decades. This is a national phenomena. Unclear why this is happening. Less drinking could be part. Lower testosterone. Social programs. Whatever the reasons this is great news. It also means we are going to see a whole lot less people in prisons and jails in a decade.
We need less prison beds not more. We need to push back against correctional unions that are fighting this. It should be the decade we close prisons not build them!
When I started in criminal justice reform there were 2.3mm in prisons or jails. My bet is that by 2035 we will be 1/2 that. We need to divert the resources we should save to making sure the men and women who do serve time come out as productive, tax paying citizens.
