@gay4jay Yeah I think it’s mostly due to accidental low hydration. Using AP flour since I forgot I’d run out of bread flour also probably didn’t help. I’ll def try again soon with tangzhong, proper hydration, & strong flour though.

I made a boule, gotta get a sharper razor & let it prove for longer next time. Also maybe I’ll buy a banneton to get real fancy with it heh

@LexxxLuthor_ interesting! do you think thats the result of low hydration? or the tangzhong? I tried to make a sourdough Pullman/shokupan with a tangzhong and the crumb was similar to this.

@gay4jay No lame (yet!). Hydration ended up only being like 50 to 55% bc I also tried using tangzhong for the first time in something other than a roll & I miscalculated lmao. The crumb was a bit tight for my liking & overall I didn’t get the rise I wanted but it was still pretty tasty!
