Maybe it saves them some money? Drywall is expensive in Texas and I've had to approve several strange construction techniques

They won't lay the boards like that in Aus because it would be a pain to screw the long length on half a joist also use the cut at other end. Most of the ceiling sheets are 16ft here and you can order 20's if you have good spans.

These guys are trying to save money when installing drywall, and will lay down 4x8's based on the geometry of the ceiling they're covering up (not always parallel to the joists).

@DrewNextD00R @DJpowers69 @washghost1 If it's conventional construction you can tell where the ceiling joists are based on the orientation of the unpainted ceiling sheets.

The header beam that she removed above the closet door may very well just be floating and used entirely for setting a door jamb. Usually newer homes use roof/ceiling trusses that allow for almost no interior LB walls.
