Cooking on wood. A first for our cookware, and it worked beautifully. Our copper pans were recently put to the test on an @ESSE1854 Ironheart wood-burning stove at @ScottsStoves. Really pleased to see our British Made Copper Saucepan featured in use during Sam Nixon’s recent Ironheart cook stove demonstration with @ESSE1854 What stood out most was the way Sam spoke about cooking on fire. Not just as a method of cooking, but as something ritualistic, enjoyable and grounding. That feels very aligned with how we see cookware too. It should not just look good. Deglazing. One of the simplest techniques that separates good cooking from great cooking. After searing steak, duck breast or chicken thighs, those caramelised bits stuck to the pan aren't waste. They're flavour. Add wine, stock or even water, scrape the fond loose, and you've got the foundation for a proper pan sauce or jus that lifts the entire dish.
