I think it's a case to case basis but I do use 'viand' more because for some reason it's a new word that's easier to absorb for them than 'ulam', it might be the psychology of 'oh it's English, even if archaic/obsolete' Dish is also used in convos but very rarely.

@shiori_p0n Personally I've only ever used viand when speaking with international friends. Locally, I automatically defer to ulam because everyone knows what it is.

@shiori_p0n Also 'viand' is easier to use as a term when speaking with foreign friends who would understand it better than 'ulam'/can look it up easier. And ulam could mean something completely different, especially in SEA. ie. 'ulam' in Malay is a dish of herbs, 'lauk' is their ulam
