Ingredients
8 corn taco tortillas
500g LEAN minced beef (95%)
1 pack American BBQ seasoning
8 slices burger cheese
2 cups lettuce shredded
3 onions very finely sliced
2 tsp maple syrup
¼ cup fresh parsley finely chopped
Sauce
½ cup Greek yoghurt
¼ cup reduced sugar ketchup
1 tsp garlic powder
1 tbsp American mustard
2 tsp coconut sugar
2.5 tbsp dill pickle finely diced + 1 tsp pickle juice
Note: Please use lean minced beef and verv little oil to avoid greasy tacos.

Method
1. Cream butter and sugar until light and fluffy.

3. Mix flour + baking powder.
4. Add dry ingredients alternately with milk.
5. Add vanilla.
6. Bake at 180°C (350°F) for 30–40 minutes.
Sponge Cake (Light & Airy)
Ingredients
• 4 eggs
• ¾ cup (150g) sugar
• 1 cup (125g) all-purpose flour
• 1 tsp baking powder
• 1 tsp vanilla
Method
1. Beat eggs + sugar until thick and fluffy.
2. Gently fold in sifted flour + baking powder.
3. Add vanilla.
4. Pour into pan.
5. Bake at 180°C (350°F) for 25–30 minutes.
No butter → very light texture
