@RowanBrightonB To be fair, I think some creators of beat sheets do present them as infallible recipes.

I think a lot of hate for beat sheets and plot maps is based on a fundamental misunderstanding of their purpose. They aren't a recipe for writers to follow exactly, they're a guide to reader expectations that you're supposed to use to subvert, invert, and innovate with!
