Here is the quickest way to get a first principles big picture view of food safety: are hospitals in India overflowing with food poisoning cases? Or just heart disease & diabetes? India’s food systems aren’t perfect, but for sure, there is more food safety than basic scientific common sense in food panic content.

Social media has trained people to think food safety works like this: Lab detected thing, therefore cancer That’s not how it works. Dose matters. Then metabolism, and exposure duration. Also - the test needs to be reproducible across many batches. Background contamination has to be ruled out. And finally - statistical techniques are needed to rule out actual signal vs noise. All the “food safety” theatre you see in the media is content, not knowledge

A chemical being detectable is not the same thing as: 1. dangerous exposure 2. chronic risk 3. population harm 4. proof of deliberate adulteration It’s just that modern instruments can detect insanely tiny traces, which is why real science requires that you ask: “How much? How often? What risk?” But if you want to go viral, all you have to do is say X is carcinogenic and it was detected in this sample without bothering to say that X is carcinogenic only in the “inject a rat with massive quantities for weeks” sense

@essayl @baxiabhishek Yep. Incidentally, on a serious note, it's the mix of methyl salicylate, eugenol (from clove), cinnamaldehyde (from cinnamon), menthol etc that give this general "drug store/painbalm/cough syrup" vibe
