Recently visited the beach at Carlin Park in Jupiter, FL at sunset. The water has washed the sand away to reveal the craggy coquina stone of the Anastasia Formation. These rocks are made of sedimentary fossilized coral, shells, and sand, compacted over thousands of years. Watched as the shadow of night advanced over the pink sky, while the waves lapped the grey sand. The air was cool, and you could smell the ocean spray as it splashed off the rocks. Fighting back tears from the deep emotional experience I'd just had during my bison encounter at the Rocky Mountain Arsenal NWR, I looked up to see the Denver skyline looming on the horizon. And, it was as if my eyes had been opened yet again. All around me I saw the boundaries of the refuge - wire fences to separate the development from the protected prairie lands, as if declaring to the city: "This far, no farther!" But, it wasn't a confrontation- it was a coexistence. The prairie dog mounds dotted across the landscape made that very clear to me... they had their own type of development going on here. It was a tragic and hopeful feeling all at once, that even amidst the throes of urban growth, the spirit of the Wide Open West survives. NƯỚC MẮM VÀ GARUM: KHI HAI NỀN VĂN MINH GẶP NHAU TRONG CHÉN NƯỚC CHẤM     Tan làm, về nhà, dọn mâm cơm ra là thấy chén nước mắm. Người Việt mình coi nước mắm là "linh hồn", là thứ định nghĩa nên hương vị quê hương. Nhưng có bao giờ bạn tự hỏi, ở bên kia trời tây, những người La Mã cổ đại cũng từng say mê một thứ "nước mắm" y hệt như vậy không? ​     Đó chính là Garum. ​     Sự tương đồng kỳ lạ:      Hàng ngàn năm trước, người La Mã đã biết ủ cá với muối trong những chum gốm sứ lớn để lấy nước cốt. Còn ở Việt Nam thì ủ cá với muối trong những thùng gỗ lớn rồi lấy nước cốt. Cách làm Garum và Nước mắm Việt Nam giống nhau đến ngỡ ngàng, dù hai nền văn hóa cách xa nhau vạn dặm. ​Từ sự sang trọng đến bình dân: Nếu người La Mã coi Garum là "vàng lỏng" chỉ dành cho giới quý tộc, thì nước mắm của chúng ta lại là thứ gia vị bình dân, len lỏi vào từng ngõ ngách tâm hồn Việt. ​    Giá trị cốt lõi:     Dù là Garum hay Nước mắm, đó đều là kết tinh của sự kiên nhẫn và lòng tôn trọng tự nhiên. Phải mất hàng năm trời ủ chượp với muối, cá mới hóa thành một loại nước chấm có hương vị đậm đà gọi là nước mắm ở Việt Nam hoặc Garum ở La Mã. ​    Ăn một miếng ngon, đôi khi không chỉ là cảm nhận vị giác, mà là đang chạm vào cả một dòng chảy lịch sử.
