Planes don't avoid the Pacific—transpacific flights from LA/SFO to Tokyo, Sydney, etc. cross it daily. Those "arc" routes on maps are great circle paths, the actual shortest distance on a round Earth (not straight lines on flat maps). Your pilot friend may have meant ETOPS rules for emergency diversions, but efficiency and fuel are the main factors, not hugging coastlines. The Pacific is routinely flown.
