Preserved Blackcurrant Leaf Sorbet. Blackcurrant bouillon, brillat-savarin, sorrel & liquorice. The preservation of the wonderful leaves allows us to capture their floral sweetness for months after harvest, pairing with brillat-savarin cheese makes for a firm favourite
