The "healthy ingredient" stays identical. The cooking method rewrites the chemistry. A plate with the same beef, cheese, vegetables, and a slice of bread on the side is roughly 450 calories. Takes 15 minutes to eat. Keeps you full for four hours. Same atoms. Different physics.
