@lettymavuso57 @CheckersSA @CheckersSA has called me back. It is 100% olive oil, derived from olives. Olive is the source, which is considered a vegetable (as distinct from a marine, or seed oil) & the regulations ckassifying oils require that the source be stipulated. Hence the awkward labelling.
