Interestingly, Cinco de Mayo is less widely celebrated in Mexico than in the United States, where it has become an important cultural celebration for Mexican Americans. The typical American Cinco de Mayo is a day of eating tacos and drinking margaritas. But, just as you won’t find corned beef and green beer in Ireland on St. Patrick’s Day, you won’t find ground beef tacos, nachos, and frozen margaritas in Mexico on Cinco de Mayo. The traditional food eaten in Mexico on Cinco de Mayo represents the culinary traditions of Puebla, which is considered by many as the gastronomic capital of Mexico, way before Spanish explorers arrived. The sacred town of Cholula, known for its great pre-Colombian pyramid, was also home to pre-Columbian street food. In this ancient city, vendors would set up outside the pyramid to feed those who came to worship. When the Spanish arrived, they settled near Cholula and created the city of Puebla. Spanish nuns later invented many of Puebla's famous dishes by combining Old World traditions with New World ingredients in convents and monasteries. Today, the traditional celebrations in Puebla focus on an incredible array of local gastronomy. The undisputed king of the table is Mole Poblano, a dish featuring a rich, complex dark sauce made of local spices and dark chocolate over tender chicken. Another local specialty is Tacos Árabes, representing Puebla’s unique twist on spit-roasted meat, wrapped in a fluffy pan árabe (pita-style bread) as a beautiful nod to the city's Lebanese heritage. Finally, the festivities include Chalupas and Cemitas, which consist of crispy little tortillas topped with salsa and hearty sandwiches packed with stringy Oaxaca cheese and avocado.
