A man ate nothing but meat for a year. The doctors were shocked.
In 1906, Vilhjalmur Stefansson left for the Arctic. Over the next decade he lived among the Inuit across multiple expeditions, adopting their diet of meat and fat. No vegetables. No grains. No supplements.
The Inuit had virtually no heart disease, no diabetes, no obesity. They ate seal, caribou, whale blubber, and fish. Stefansson ate the same way and thrived.
Nobody believed him. So in 1928, he checked into Bellevue Hospital in New York. He would eat only meat for an entire year under clinical observation.
Doctors monitored everything. Blood, urine, weight, blood pressure. They expected scurvy. Kidney failure. Heart problems. They were waiting for him to collapse.
After 365 days of nothing but meat: blood pressure normal. Kidney function normal. Weight stable. No scurvy. No deficiencies. Perfect health.
The results were published in the Journal of Biological Chemistry. Then quietly forgotten. They didn't fit the narrative that meat was dangerous.
He proved it with his own body. Under clinical supervision. They ignored the evidence.

William Banting was a London undertaker who couldn't lose weight.
He tried everything — starving, exercise, Turkish baths. Nothing worked. He was obese, deaf, and desperate.
Then his doctor gave him a radical prescription. Cut the bread. Cut the sugar. Cut the potatoes. Eat meat, fish, vegetables, and dry wine.
In one year, he lost 46 pounds. His hearing came back.
His energy returned. At 66 years old, he felt better than he had in decades.
He published Letter on Corpulence in 1863. It became a sensation across Europe. "Banting" became a verb for dieting in English, Swedish, and German. Low-carb was standard medical advice for obesity well into the 20th century.
Then the 1960s happened. The fat hypothesis took over. Doctors stopped asking what you eat and started asking how much. And Banting got buried.
A hundred years of working medicine — gone, because a new theory was better for selling drugs and processed food.
He figured it out 160 years ago. No sugar. No grains. Sound familiar?

On Tuesday, we reviewed a bill to eliminate the "conscientious beliefs" exemption from MMR vaccines (measles, mumps, and rubella) for kids in Minnesota schools and childcare.
These folks often say that medical decisions should be between patients and doctors, and that it is important to consider people’s experiences. But when the rubber meets the road, they don’t.
Which is why I always share my story. At age five, I had a severe allergic reaction to the MMR vaccine and couldn't walk for over a month. My doctor told my family to slow down the vaccine schedule. When it was time for the next dose, my doctor decided it wasn't safe, but still refused to sign a medical exemption over concerns about their license. The only option my family had was the conscientious beliefs exemption.
Fast forward to Covid. Three separate providers told me they wouldn't give me the vaccine because of my reaction history. Not one of them would sign an exemption either. I was stuck in no-man’s land.
There are families all over Minnesota living the exact same situation, and they deserve to have their voices heard too. This bill leaves them with no options.
