Even ‘how are you?’ is open ended and requires so much thought to articulate. ‘I’m thinking of you and hope today has been manageable’ is an easier in. They’ll reply if they can and you’ve let them know you are there.

Sometimes people going through it are so overwhelmed they can’t even figure out what they need. So instead of ‘Let me know if you need anything’ try ‘Do you want me to bring a lasagne on Friday/drive him to chemo tomorrow/sit with him so you can leave the house for two hours?’
