They deconstruct broken rice grains into starch, protein, and fiber components, then reassemble them with added protein sources and micronutrients into grain-shaped structures that cook and taste like regular rice. Food engineering, not genetic modification. The numbers: conventional polished white rice runs 6-8% protein. This comes in above 20%. Glycemic index below 55, which puts it in the low-GI category. For context, regular white rice sits around 70-73 on the GI scale. They've also embedded iron, folic acid, and B12 directly into the grain structure to address anemia. India has 101 million diabetics and 136 million prediabetics. Rice is the primary calorie source for roughly 65% of the population. You can't tell 800 million people to stop eating rice. In regards to the overwhelming and unexpected response to my post yesterday I will need a few more days to go thru all the amazing NFT projects that were submitted. I'm blown away by the actual depth of the space that I never realized until this morning seeing the massive engagement on that simple post.
