👨🍳 Solutions en plusieurs points (oui je flex en même temps) : - farine avec un taux de protéine bas (moins de 12%) - 1-2h de repos minimum entres les tours - 24h de repos après les tours - dorer 2 ou 3 fois la galette en laissant sécher entre les couches (jaune + crème uniquement) - faire des trous sur le disque du dessous de la galette et 1 au milieu après le rayage 🫡
