It's a reference to a conversation in the book. Grace mentions humans can sometimes see heart (glowing from hot things) rocky was already so processing the concept of sight, which he found amaze. But both Rocky and Grace can sense heat. So Rocky tried to imagine how heat works when sight can detect it and he thought something like texture differences in touch. The sudden change to a glowing monotone color map is Rocky attempting to understand how Grace is seeing the glowing heat of plasma.

I gotta say, I didn't understand this scene.
