I'm thinking specials for my menu and I'm thinking a bangin' bowl of bolognese every once in a while. This is more a British spag'bol, as the traditional Emilia-Romagna style is made with tagliatelle (and some other special ingredients) #pasta #inverness

I was gifted chanterelle mushrooms from the local woods so I'm testing an Italian style preserved mushrooms for antipasto for dressing anything from pastas, pizzas and salads. They have a hard day of drying ahead before jarring them up! Excited for this! #italian #inverness

Believe it or not this is ricotta cheese! (homemade at that), mixed with a couple lovely things and deep fried to become extra fluffy and a lil' crispy. A dessert potential? A special? I guess you'll have to wait and see... #dessert #inverness

With every portion that goes out there will be two slices of homemade Ligurian focaccia to mop up what sauce 'might' be left on the plate. This is known as a scarpetta, the 'little shoe' that is meant for cleaning up your bowl at the end of a meal! #inverness #foodie

Sometimes less is more, especially when the ingredients are top notch! Gnocchi pan fried with brown butter and sage sauce. A variation of this will be appearing on the menu, which hopefully isn't too far in the future... #foodie #pasta
