This is very difficult for me say. As many know, I’ve long and courageously spoken out, despite the consequences, on the topic of Egyptian food, how it’s a blight on humanity and a major cause of depression (FYI: here is the section on food from Lonely Planet 1999 ed.). But there has been a *major change* in the Egyptian food scene. I was recently there, and the food was EXCELLENT at every single place I ate. The bread, aysh baladi, which was long dry and flavorless, was fresh and soft every time I ate it. God be praised.
