The English word "pudding" probably comes from the French word boudin, which means sausage. In the middle ages, before ovens were common in every household, the standard method of cooking was boiling. To eliminate the need for a sausage casing, meat was boiled in a cloth bag along with fat and grain. This is what became known as "pudding".
Over time, people started mixing in other ingredients, and the term came to mean anything cooked by boiling it in a cloth bag. People would mix in fruit (and make things like plum pudding), so people eventually began to think of pudding as a sort of desert.
By the time America became a country, home ovens were common, so boiling food in cloth largely fell out of fashion. Pies and custards became the preferred deserts.
Then in the 1930s, Jell-O used the word "pudding" for a specific product (a sort of custard), and that solidified "pudding" as what we think of it today. However, the word is still used for other things in Britain, such as blood pudding, which is a sausage.
