Specialty coffee is an easy term thrown away recently by most brands trying to occupy the space. It is considered cool in the lingo and marketing. Anything specialty can make it sound and feel expensive. They also have terms like single origin, direct to farm etc etc. But do all those make a difference everytime ? An origin is considered predominantly for traceability in countries where coffee isn’t grown and they depend extensively from other countries to source their coffees. Origin can mean a lot to things from taste to processing to transparency etc. When Indian brands showcase single origin I personally doubt if they do know the difference an origin makes to the bean or their roast and if that can be experienced by the end user. In coffee genetics play a more vital role than the origin and processing the genetics to express its true potential unlocks the actual flavour profile which is then expressed when roasted to its true potential. In most cases in India neither of that happens. A combination of right growing, processing and storage of green coffee before roasting with its highest attention to quality is true meaning of specialty coffee. The meaning is complete when the financial value is also attributed to quality and not behind fancy jargons. People evaluating specialty coffee in India aren’t calibrated to the global standards by a large scale which gives rise to an Indian bias on taste calibration where in a coffee q graded in India for 85 points hardly scores at 81 globally. I am going to solve every single of these gaps in the market one at a time. Some of it directly, many of it working in tandem with other brands and collaborating in the space. Sharing and using knowledge to elevate the space as a whole proves more valuable than holding onto it selfishly.
