Currently addicted to @TampopoEats prawn cutlets (probs not the real name 😳) and their spring rolls. I remember the first spring rolls in Manchester which weren’t tasteless small pillows, by The legendary Harry Yeung at the Yang Sing 45 years ago. His were also crispy, not soggy

Tripe can be cooked down into soft slithers but our ginger and spring onion tripe has a little bit of bite, just the way we like it!

I think in the past - from butchers and UCP - it could be a stronger flavour, which is why some older people don't like it. That, and squeamishness at what it is, of course.
