@Gruffdogga yeah ive done a bit of dry brining with some wagyu and rib-eye steaks but the space is more of an issue for me with the wet brining

@HughZ Brining is just a great way of tenderising leaner meat if you have the time. For marbled/fatty cuts casing it in salt overnight is a better option. 🥘

@HughZ I love maple syrup on smoked pork, I did some very similar that I brined for a day in apple juice, spices salt. Love your work 🔥

@VirtuousVinnie thanks man! I did 3 sets yesterday - the first was a sticky honey rib, and I used a honey-bbq rub with a little bit of a maple-bbq rub too. the second type was a savoury bbq flavour, and on that i used a salt-pepper-garlic rub with a little bit of a bbq rub i got from bunnings.
