@andyheald @Sebast1antombs @todellisocial A long tradition of making Birch sap wine in Scotland and plenty of Highland Birch that are very old and very prolific. Birch syrup is quite unusual and needs a ration of 100:1 to make.

I'd not given it any thought, yet I'd read up on tapping birch trees to make birch sap wine (they need to be much bigger than any birch tree I've found in the UK) has me wondering if you can make birch syrup as well or even mapple sap wine
