Never eat gumbo in public. It’s a dish best prepared in a reasonable portion in a home kitchen. Massive batches of gumbo sold at outdoor events shouldn’t be legal. Does anyone know about food safety? Don’t eat gumbo from Popeye’s either. It sits in a warmer all day. Do you know what happens to cooked shrimp that sits at room temperature or higher? Have people never had food poisoning? Seafood is nothing to play with.
