There’s really no workaround except buying and or growing specific historic cultivars that you have to actively search and pay a premium for, which frankly is just not worth it. Eat more veggies and fruits everyone!!

Also important to note that modern plant genetics play a large role in nutrition density. Higher yielding cultivars can only extract so many more nutrients from the soil relative to their increased growth. Therefore the nutrients get diluted among all the extra plant matter.
