@HorsleyScott Friendly note that there are many good subs for eggs in baking! Depending on the role of the eggs (binding, leavening, structure) there are great replacements including mashed banana, applesauce, commercial egg replacer, and flax “egg”. Vegan recipes to the rescue!

Hey @HorsleyScott - there are actually a lot of replacements for eggs in baking! Mashed banana, applesauce, commercial egg replacer (usually potato based), silken tofu, and many vegans’ fave: flax “egg”. Friendly reminder considering the high cost of eggs this holiday season.
