Beyond meat! What comes next?
The beyond meat exploration of protein and nutrients is not a passing fad altho the thought of a vegetable burger may cause nauseating and cardboard flavoured foods to come to mind. The fact is vegetable substitutes are readily available and easily managed in the home kitchen. Thinking green is also about how we consume protein, beef is by far one of the biggest greenhouse gas offenders. Generating 60 kg of greenhouse gasses per 1 kg of meat, we can make a dent into the overall global impact of greenhouse gases by simply changing how we eat. Ok I know you still want a big juicy burger and that is good! Variety is the spice of life as they say. Substituting a beef burger for the lentil burger every once and awhile is good for the environment and great for your bank account and heart healthy
The price of beef has gone up in the last year as record droughts and low bushels on the farm have caused a spike in feed prices. Feed barley and other feed for cattle has been limited this year by less than ideal farming conditions and pushed bushels per acre to record lows on some farms. This mean that cattle producers have had to pay more to feed their cattle and that cost will be passed on the consumer. I predict a sharp increase in beef prices in 2022.
We already use fillers in or beef and when you shop at the grocery store to buy burgers sometimes what your get is a large amount of filler products. Things like toasted wheat crumbs, oats, pink slime are already used by a lot of major burger spots, this trend will continue.
I enjoy a juicy beef burger as much as the next person and the thought of lab grown alternatives makes me a bit queasy. I was surprised to learn that you can make juicy burgers right in your own kitchen! I was a bit doubtful that I would enjoy these burgers and thought for sure my kids would take one bite and decide this was not for them. I found a recipe for lentil burgers and as I usually do got creative with it. We found it to be very simple and incredibly delicious. My kids also loved them and we make them at home as a burger substitute a few times a month. When you eat lentils instead of red processed meat you are making a heart healthy choice.

Lentil burgers
to cook lentils Be sure to use a large enough saucepan as the lentils will double or triple in size. Bring to a boil, cover tightly, reduce heat and simmer until they are tender. For whole lentils, cook time is typically 15-20 minutes.
2cups lentils 5 cups water 1 cup beef broth
Add 2 TBLE Spoon chicken stock to lentil water as its cooking
2-1/2 cups sliced mushrooms
2cups sliced celery (to watery find a substitute. Or simply remove or add at the very end when adding potatoes)
1 cup onions
4 cloves garlic
1 cup bread crumbs or crackers crushed
2cups cooked lentils
2 tablespoons thyme
2table spoon ground flax seed (egg replacement)
1 medium potato grated add at very end when forming patties
1 cup shredded mozzarella cheese mix with potato shredding
Make patties small like skinny so they cook evenly through. Pretty much one good flip on bbq or skillet, also good to use oven to cook.

Mustard
Pickles
Lettuce
Cheese slices
Saratcha hot sauce is also good for dipping
