Lame question, but does anyone have any recipes that you don't mind sharing for using beans? We have a bunch of different kinds that we need to use, and I'm fresh out of ideas. And please don't say refried beans for tacos.

Pink Bean & Zucchini Walnut Salad with Balsamic Ingredients: 1 can (15 oz) Pink Beans, rinsed and drained 2 medium Zucchini, sliced into thin rounds or ribbons 1/2 cup Walnuts, toasted and roughly chopped 1/4 cup Red Onion, thinly sliced 1/4 cup Feta Cheese (optional, for crumbling) Balsamic Dressing: 3 tbsp Extra Virgin Olive Oil 2 tbsp Balsamic Vinegar 1 tsp Dijon Mustard 1 clove Garlic, minced Salt and black pepper to taste Instructions: Prepare Zucchini: To ensure a crisp salad, you can lightly sauté the zucchini for 2-3 minutes or, for a raw salad, sprinkle the slices with salt, let them sit for 10 minutes, and pat dry to remove excess moisture. Toast Walnuts: In a dry skillet over medium heat, toast the walnuts, stirring constantly, until fragrant (about 3-5 minutes). Be careful not to burn them. Make Dressing: Whisk together the olive oil, balsamic vinegar, Dijon mustard, minced garlic, salt, and pepper until emulsified. Assemble: In a large bowl, combine the pink beans, zucchini, red onion, and toasted walnuts. Toss and Serve: Pour the dressing over the salad and toss to coat. Garnish with crumbled feta if desired.

@Michell9704767 Brazilian Black Bean bowls: Put a can of sliced beets in fridge to chill. Make white rice; warm black beans on stove with some cayenne and garlic. Assemble as such: rice, beans, finely shredded cheddar, lime juice, cold beets and cilantro. I crave this recipe! 🥣 🫘 🌿 🫜

@Michell9704767 Just putting away the leftovers now. 😅 It was pretty good, and everyone ate it! Saved away the rest for a leftover dinner or multiple lunches. Sometimes I make quesadillas with it another night, so it’s not the same-same.

@Michell9704767 I make a variation of this soup often. It varies what bean/beans I have in hand. You can do whatever. I get it in the oven first thing in the morning and by evening there is a lovely dinner. I cook it all in my giant bean pot, you can use a dutch oven too thekitchengirl.com/ham-and-bean-s…

2 lb bag Great northerns Soak overnight 1 package diced bacon, cook until crisp 1 onion Bell peppers and celery if you got em Bunch of garlic Salt and herbs, cook all that until soft Pour in soaked beans, chicken stock and simmer until stock has thickened

If you use your instant pot and do them beans with 1C beans 3C liquid (and use broth) on manual pressure for 25min (kidney beans may need 30min) it’s a game changer because you can throw frozen chicken or beef in there with the beans - then you can add taco seasoning, or cumin, or chili, or just salt n pepper and then serve it in a bowl with top dressings like rotel, cheese, sour cream, Fritos, Tostito, corn bread muffins, the options are endless and leftovers become a veggie soup base or a chili… and in this house if you don’t like it i will just quietly pick your bowl and tell you that you can be excused from the table now 🤣😂 👋🏻

@JSsotired You know...some of my family loves southwestern egg rolls. I've never thought to make them myself. Great idea. I have to be careful with anything considered Mexican food because that's mostly what's served here (that's all my spouse wants) and the kids are sick of it lol.

@Michell9704767 Charro beans, cowboy caviar, hear me out tho- refried beans for tostadas, sopes, torta. You can do a brownie with beans also. Add to southwestern egg rolls. Black bean and corn salsa, bean dip, taco salads

@BamfordDaneen Right. I use bell peppers or not based on what the rest of the recipe is. We like them but not in everything.

@Michell9704767 I do make the white beans, like the recipe below, but I do hamhock in it! My husband doesn’t like bell peppers so I don’t do that. I just made some last night, so good!!

@_donutninja Unfortunately I haven't met a falafel that I like.

@Michell9704767 You can also make falafel with chickpeas. We would put them in a pita and make different sauces.
