We know what they did, **because** they did it. It's not the other way around. God knows what we choose because that's what we choose. And because we freely choose to sin, God judges us. I mean think about it... imagine everyone is going around acting totally depraved and evil, but no one knows what they're doing. There's no "knower." Now add a "knower," nothing else changes. Someone now knows what they're doing. Are they now somehow not responsible for their actions because someone knows what they're doing? I hope you can see how absurd that is.

But it boils down to "reduced contact with a contagion reduces the risk of infection" Whilst masks don't stop every droplet they do stop a lot reduce their size

Firstly, correlation doesn't equal causation. Secondly you're assuming that in reality if you hold a true belief you'll get better results, but that's an assumption about reality, not something you can actually test. So you have at least two problems here and you're not even addressing what I actually said.

If you believe that only evidence justifies a belief... That itself "only evidence justifies a belief" is also a belief. But what's the evidence for that? Ultimately beliefs have to based in something besides evidence.
