Dinner last night: Took leftover steak, sliced thin, simmering in some beef broth with Rotel and seasonings to get really good and tender, then add the cheese to make it into Queso Steak and serve over rice along with some beans and guacamole...

That sounds great! I marinate the skin on/bone in chicken in a Mexican dry rub overnight. Then - in a Dutch oven - brown the skin - then add chicken stock, a whole onion, celery and a can of enchilada sauce & @ro_tel tomatoes and cook the chicken. That becomes the base of my sauce. Take the chicken out and shred it - discard the onion & celery. In a frying pan saute diced red peppers, another can of RoTel, diced onions & tomatillos & add to the shredded chicken along with a cup or so of the sauce. That's my filling along with grated cheese. I might try your green chilis instead of the tomatillos. Would have another level of flavor!!! Great idea!

My "famous" chicken enchiladas are on the table tonight! Want to know one of my secrets? When I make the enchilada sauce- I add a can of tomato soup and cook it down a bit. Adds a bit of sweetness to offset the peppers that can be bitter & creamy thickening. #heritagerecipes

@ro_tel You need to do a better job of labeling your products (or using the correct chiles). I just ruined $15 worth of chicken with hot Rotel labeled as Original.
