It’s known that microbial load increases as the season progresses and this contributes to darker grades of syrup later in the season. How the specific microbial community composition plays into that are not as clear - excited to study further!

It's time! #BackYardSugarBush2021 has begun. Last year we tapped 2 weeks earlier, but a spell of colder weather convinced us to hold off. Might even be a good thing: last year, the drill holes started to dry up before the season was really over.

I got a maple sap sample with lots of microbial growth. Turns out the sample fluoresces under black light! Anyone want to take bets on which microbes are causing this?
