"Remember the horse meat scandal? That's why you should never trust supermarket beef." Let's do this properly. The horse meat scandal was not about British beef. It was about frozen ready meals. Lasagnes. Bolognese. Value burgers. Findus. Tesco economy lines. The cheap end of the processed food aisle where margins are razor thin and ingredients get sourced by spreadsheet. The horse came from Romania. Through the Netherlands. Via a Cypriot-registered trader called Draap, which is the Dutch word for horse spelled backwards, and if that doesn't tell you everything about the seriousness of the operation I don't know what will. Then through a French processor called Spanghero. Then to a Luxembourg factory called Comigel. Then to a freezer in your local supermarket inside a cardboard sleeve with a picture of a smiling Italian chef on it. Four countries. Six middlemen. Nobody inspecting anything in the middle. Do you know what wasn't in the supply chain at any point? A British farm. A British abattoir. A British butcher. A British cow. The scandal was a verdict on globalised, industrialised, processed-to-death ready-meal supply chains. The British beef industry came out of it with its reputation intact and most supermarkets quietly committing to sourcing more domestically after the fact. The lesson was never "don't trust meat." The lesson was "don't trust a £1 lasagne that has travelled 2,000 miles in a lorry to reach you." A whole mince from a British cow, slaughtered in a British abattoir, sold with a traceable batch code, is the opposite of the horse meat scandal. It is the thing the horse meat scandal was impersonating.

As a medical school professor, I show students MRI scans of thigh muscles that look like marbled ribeye — streaks of fat running through tissue that should hold joints together. New Radiology study suggests ultra-processed food is doing this to humans. UCSF radiologists analyzed thigh MRIs of 615 adults from the NIH Osteoarthritis Initiative. Average: 41.4% of daily calories from UPF. More UPF = more fat infiltrating the muscle — independent of calories, BMI, and physical activity. Same calories. Same weight. Same exercise. More fat inside the muscle fibers. That's not an energy-balance problem. It's a signaling problem.
