What is the difference between liver mush and liver pudding? 🤔 Good question! Liver pudding and liver mush are traditional dishes in North Carolina—they’re kind of like sausage but made from leftover pork, liver, and binders. We really do eat everything but the squeal! Here’s how they differ: Liver mush rules in WNC. Mamaw and Papaw often served it with eggs and grits for breakfast. It’s made with cornmeal as a binder and has a higher percentage of liver. It’s coarser than liver pudding and gets a nice crisp when cooked. Liver pudding rules in ENC. Mama and Brandon are both big fans. It’s made with flour (in some cases cornmeal but much less) as a binder. It’s softer than liver mush, kind of like a pâté. Personally, I prefer liver mush. What about y’all? Even better question: Did anyone from North Carolina eat scrapple when they were growing up?? 👀
