As somebody who used to work back of house I detest the lavish tipping culture. Wow...loved your meal and feel grateful and generous? Give a 1/4 of the cost of your meal to the person who literally picked it up 15 feet away and put it on your table! Before you say "but waitstaff tips out back of house", that hardly ever happened in my experience and then it was a few sad moist dollar bills. Waitstaff at restaurants frequently make more than anybody back of house with perhaps the exception of the head chef. I had friends a band in LA where the bassist was a line cook who worked full time and the lead singer literally worked one shift a week as a server and lived the same lifestyle. I'm on the side of the Europeans for this one...tipping should always be at one's discretion, not an obligation.

There are now 9.6 gigawatts of gas & coal plants offline, down from 10.6GW earlier today. ERCOT considers 8.4 GW to be high. They do not show outages on their online dashboard. Peak demand forecast for next week is 85GW. This level of thermal outages is dangerous. #txlege
