@mahwish_paikar @avtansa The newly harvested Gobindobhog or Kamini is always used for a Payesh/Kheer cos it makes it creamy or a khichri cos it gets mushy quickly. The aroma does go down with ageing.

@avtansa Strangely, whenever I have bought, cooked the newly harvested gobinda bhog or kamini variety, the rice obviously turns out groggy but the entire house is entranced by the aroma. The older lot among the varieties of kamini n such other fragrant versions seem to fade away with time

Have you wondered why Purane chawal "aged rice" i.e. fainted yellow rice is a preferred and premium rice in India? I realised there is a lot behind this aged rice which is prized across India, especially for biryani and pulao, than just hoarding by the sellers. (read further) 1/n
